I'm not comfortable with these timings and I'm thinking to ask my manager to put me on Bench (Due to medical reasons that involve mental health)
Is it a nice idea to say a firm No to a new project I'm hardlocked into, due to night shifts?

Focus on expectations of your role and what professional growth you can get from the role. Realistically you probably won’t be able to refuse a role at most firms if you’re just starting, especially at more junior levels, so don’t try to be selective. Being billable is far more important out of the gate.
I am already on the client, but my current work is ending. There are options for me to join 2 different roles for the same project in a different team.
