Roasted chopped chicken breast + romaine + green beans + roasted Brussel sprouts + roasted mushrooms + boiled egg + sesame dressing (takes about 30 minutes to cook but requires only 5 minutes of involvement from you)

Egg salad sandwich. Boil a couple eggs, then mix/mash them in a bowl with avocado, salt and pepper and some grated Parmesan. You can make a bunch in advance and have it all week. Throw it on some toast with a slice of cheddar cheese and a bit of lettuce or spinach and it’s an awesome sandwich.

It’s more of a breakfast food but I sometimes do it for lunch - just crack and egg ultimate scramble or Denver scramble with two eggs in it (one isn’t enough) and half an avocado mixed in. It’s a perfect meal in under a few minutes and fills you up.

Way too much effort involved in some of the comments above (for me). They sound good. But I’m too lazy and with kids and work it’s like warp speed meals are all that works.

Niçoise salad has been my go to because you can boil the egg and steam the green beans in advance, so at lunch time you just have to throw those on top of some lettuce and crack open a can of tuna and a jar of olives, then toss with dressing.

Salad with a cold protein. Grill the protein on the weekend (eg, extra shrimp, chicken, steak) and keep it in the fridge for a few days. That covers Mon-Wed lunch.

This is what try to do. I buy the salad kits from the grocery store and then prep chicken in advance of the week to throw on top of it. Or instead of chicken, I’ll fry up some diced pancetta.

I keep some mixed greens (the kind with chard and arugula) in my fridge and put together a loaded taco salad with taco meat, drained canned corn, drained canned black beans, some microwaved quinoa, sliced baby tomatoes, green salsa, half an avocado and two sliced hard boiled eggs. I have to avoid dairy, but it’d be bomb with a little drizzle of sour cream and sprinkle of cojita. The prep time is about five minutes day-of, and all you have to do ahead of time is cook up a pound of ground beef with taco seasoning.

I haven’t but that sounds amazing! I’m having to do gluten free too for a couple months for an autoimmune condition and finding satisfying carbs that aren’t bread or pasta has been HARD. Solid call on the chickpeas.

I pre roast broccoli with olive oil, salt and pepper and chili flakes. Pre make quinoa. Then make bowls with quinoa, broccoli, goat cheese, almond slivers and balsamic vinegar. Can also do with Brussels sprouts, butternut squash, carrots, zucchini and add meat if you want. Basically no work to make bowl as everything ready to go.

Keep some pulled chicken and prepped veggies in the fridge. Come home throw together a wrap or salad. Boom, lunch. (I did this consistently for about 4 months before I got sick if it 😬.

I second the quick wrap- leftover chicken, throw some mixed greens, hummus or cheese, maybe some shredded carrots or cucumbers (really, whatever fresh veggie you have in your fridge), and done!

What are your goals? There’s a lot loaded into the word “healthy” so it helps to clarify what you want to get out of a healthy lunch.

To get some nutritious goodness in to fuel my body and mind

Aldi has some veggie medley steamable bags that pair great with some grilled or baked chicken breast. Super easy, pretty healthy, reasonably tasty.

For those who already have a baby - I (36f) just had a baby 6 weeks ago, and my wife (33F) is now back at work (WFH) and I’m still on leave. Since I have the baby all day and get up with her all night, my wife basically “takes over” baby duty when she stops working. The problem is that within an HOUR she has lost all patience with the baby. She gets frustrated so quickly if the baby is crying and will say things like “I’m just going to let her cry since nothing im doing helps” (cont)

Still WFH? What are other chambers doing for task management? Our chambers has been keeping up with assignments, incoming emails needing judge’s eyes, and written orders, all through Microsoft Planner. We share PDFs through Sharepoint folders. Although we still email draft orders back and forth, the system seems to work well enough. We still aren’t operating at our previous capacity because it takes 10x the number of steps to get a motion heard or an order entered—90% of our workload.

I’m an L&E associate entering my 5th year at a mid-sized regional law firm (approx. 400 attorneys). Barred in PA/NJ. Billed 2100 last year but my requirement is 1950.
