I need this recipe desperately
It’s the overnight bread recipe from Flour Water Salt Yeast, and then I added about 2 cups of chopped olives and rosemary to it before letting it rise overnight.
1000g flour (bread or AP)
780g luke warm water
1 tbsp + 1 tsp salt
1/4 tsp yeast
In a really big bowl, mix the flour and water together first, let it sit 15 minutes. Then add in salt and yeast and knead until smooth. Add in the olives and rosemary. Let it sit overnight at room temp. Next morning, flour a surface, tip the dough out and shape into whatever shape you want. Proof about an hour. Bake at 450 about 25 minutes for baguettes or 45-50 minutes for round bread (are they called boules? I dunno the terminology). If you want a crispy crust, bake the round loaves in a preheated dutch oven and take the lid off the last 15 minutes. It makes about 3 baguettes or 2 round loaves.
I bet this smelled amazing as it came out of the oven!
