Yes you can say defense or even be more specific about who, unless it is an intelligence agency. Your NDA does not preclude you from discussing your work in an interview. If your work is secret then you would have to speak in generalities. Your NDA makes sure that you do not give up any of Booz’s secrets or hand over any of their documentation. By the way, once your project hands over your deliverables to the DOD it is then DOD property.
You will likely have to be more specific on your resume because recruiters are often looking for experiences with specific DOD orgs.
Yes. My guess is that the NDA is more about the deliverables and any data that you may have used, not who you worked with. If nobody who worked with DOD entities put it in their resumes, nobody could get a job for other DOD contractors.
I use large federal agency on my resumes
US Department of Defense
Then maybe say “federal client”
I say “federal homeland security client” for DHS. Pretty much saying it without saying it
