Marrakech, Atlas Mountains, Sahara Desert, Fes, Chefchaouen. Things are pretty spread out so joining a tour group is probably easiest
For me, we literally are planning for one week. Sunday to Sunday kinda thing.
If I were there for only a week, I’d do this:
1. Land in Marrakech and go right to Essaouira for a day or two. It’s such a cool coastal vibe. Really beautiful and not a super far drive. One of my favorite places in the country and a cool introduction to Morocco because it isn’t as hectic as Marrakech.
2. Then head back to Marrakech and explore the city for 2-3 days.
3. Then take one of those tours to Merzouga to see the Sahara sand dunes. I took a bus and cabs and sort of made my own way there with several stops throughout the mountains and some old casbahs, but you may not have time for that.
4. The tour takes you back to Marrakech and you leave from there.
I spent time in Fes and really enjoyed it.
But if the desert tour is 4 days and you’re only in the country for 7 days … I’d recommend Marrakech and Essaouira instead of a trek to Fes. It’s what I would personally do.

Highly recommend a classic 3 day 2 night Sahara Desert/Merzouga tour. It was tiring but one of my absolute favorite travel experiences ever.
