Unlimited PTO is an accounting trick to make sure they don’t pay your PTO out when you leave.
So true! And makes it harder for you to take any time off.

I usually take 3 weeks off not including holidays (with holidays about 4-5) but many of my colleagues take a lot more time off!

Will be about 4.5 weeks this year. Unlimited policies are shown that on average, employees use less days (that is what I was told at least) since employees aren't trying to hit a certain number of days off they have in a given year. Also yes if you do not have a bank of PTO hours, there is nothing to pay out if you were to leave.
My experience with the policy is good, they don't want you taking every Friday off for example, but especially if you are on top of things in your role, you should be able to take off time a plenty.
