If you do Spain, I would focus on one city and maybe go to a small town near it for a day or two, like Madrid and Toledo; or Sevilla and Granada and cordoba.
I enjoyed Portugal more than Spain when visiting both (and am revisiting Portugal this summer). That said, Sevilla was pretty awesome and would agree with D2’s advice to focus on a city/region for only a week.

This. We felt 4-5 days for Barcelona was plenty. Lots of nearby towns you can do a day trip or spend overnight in.

Rather go with Portugal, if it is just 1 week.. Spain at the least takes 2.5 weeks!
Spend a week in Barcelona or split between Lisbon and Porto

Spain, and if you go to Seville try to go around La Feria, their spring festival. Although I think this year it’s early May…
