Mind maps. I like just dumping everything I know/think I know upfront. It's helped me understand where I have a disconnect with the client/product and given me some inspo down the line when I may have forgotten some detail.
For me it all starts with identifying what the large business goals are that year (grow revenue by 50%, unlock sales to go after enterprise markets, unify and integrate with other products, etc). Then create projects that align with those initiatives.
