I received & accepted a job offer. But I haven't heard back from my new employer. My last day at my current job is this Friday. I was in contact with the internal recruiter from the new firm all last week, but I never got acknowledgement of them receiving my signed offer letter. My start date is contingent upon a background check. I haven't received one single form to fill out related to that. I feel like I shouldn't say anything because I've already been coming off as extra eager. Any advice?

A few days to up to 3 weeks. Ask your recruiter to follow up if there is a place you are really interested in.
This happened to me in the past, which can be extremely worrisome especially in today's market. Some firms tend to have a slow moving process or it's a period where key decision makers are tied up, but others have no excuse just dragging their feet. As mentioned above, you should have your recruiter follow up and see if they can get any details on the hold up. I even had firms that seemed super interested just ghost me. My candidacy probably remains unresolved to this day 😂.
