Upstate NY: Saratoga, Lake George, Lake Placid (there’s a great trail near LP called Indian Head- highly recommend and parent friendly)
You’re picking one of those states, right? To me, less than 2 nights in one place is useless because you don’t get the feel of it and are constantly traveling so it’s tiring. Having said that, any of the suggestions above are great.
Know that mud season is real in VT especially. There are often road closings and detours.
The Mt Washington area in NH is beautiful for driving and short hikes. Drive the Kangamangus Highway, up Mt Washington. There are all kinds of road side vistas.
