Do you like weed? If so I'd do Paris London and Amsterdam I'd do 3-4 days London and 4 days Paris (and take a train to either Versailles or mont st Michel for part of that and stay in a chateau around there) and 2-3 days Amsterdam.
If you're up for doing only 1-2 countries, I would recommend Barcelona, Madrid and Seville. Or adding in Lisbon as well. Did that in late March last year, loved having 2-3 days in each city to fully explore and not have to cram everything in/always worrying about making flights.
Fly to Nice, rent a car. Drive to Monte Carlo, sleep. Drive into Italy for a day, sleep. Drive back through the south of France towards Spain (two day stops). Stay in Barcelona and head back one day before your return. Upon return reflect on how much better the quality of life is in the south of France, sell all your stuff and move.

Prague, Barcelona, Paris...I would suggest Istanbul if it were not for the unrest.

@A1 perfect, that's what we were thinking! @EY1 love that suggestion and will save that trip for when our EPL team is playing. @A2 flying from JFK, and @BSC1 already did Istanbul- amazing city.

Yep - strictly layovers....Zurich to Vienna is a great train ride - picturesque
Fly round trip to Dublin (cheap) and immediately fly to Amsterdam (2-3 days), then Brussels (1-2 days), then London (2-3days), then back to Dublin (1-2 days). If you have time, try 1-2 days in Edinburgh with another possible addition of a day trip to St Andrews
- Paris, French Riviera (stay in Nice), Madrid;
- Barcelona, Amsterdam, Copenhagen; or
- Vatican City/Rome, Tuscany, Amalfi Coast

Assuming back out to JFK... Zurich (and then to Vienna by train), train on to Budapest, fly to Prague, back to JFK via London (or Paris, but CDG is a terrible airport). *A best for that route....
Thanks @A2, seems like a lot of cities in a short period of time. You think it's doable? Or treating Zurich and London strictly as layovers?
JFK slightly limited on direct flights - Newark likely better
