I don’t think it hurts to explore other opportunities. You may find an org you like better and that’s willing to pay more. You could also try to leverage any (potential) offers for a raise with your current company.

I am in a very similar boat to you. Also an ITSM developer background, just with a different platform. I was about to abandon the industry completely until I got offered this new job as a PIA. I’m still having to do development, but it’s not as heavily emphasized as previous roles.
It’s so hard to leave when the demand and money is always there, but it’s also daunting to pivot away from something you’re already significantly invested in and doesn’t have skills that would translate over to the same dollar amounts.
Ultimately, at the end of the day, you have to figure out what brings you the most happiness. If it’s money, and you can keep waiting out the work weeks to enjoy your money on weekends and vacations, then go for it. Otherwise, we spent so much of our time working, it gets to be mentally draining beyond belief when we are stuck in something that is not doing it for us.
One idea, especially if you are getting lucrative contract offers and are bored easily, is to do contracts only. I know of an old colleague, who does that with PeopleSoft. They make an insane hourly rate, then take a break for a few months and travel, then pick up contracts whenever they need money.
