So an opportunity has come to me by simply switching gym LinkedIn profile to open to work. It’s very ideal to the pay I want to be making and similar to the work I already do. My hesitance is that I really love the people I work with in my current role. Should I approach my a manager/HR with my pay issues and see if they can meet me or move on?
I’d follow the opportunity a bit further. If it really is better then make a decision. Nothing is 100% until you have an offer. This could take weeks/ months. Then look at your current position and consider approaching your manager.

It's not a bad idea to see if your current company can match. But this new position sounds like exactly what you want so it may just be time to take the leap.
Slippery slope. Few options here, but be tactical in how you approach.
1. Justify a salary increase based on market value and cost of living rising. NOT on a potential competitive offer.
2. Go after the better compensation opportunity, and still negotiate after the initial offer. The people you like will be there after you leave, you can always keep in touch with a bigger check in your pocket.
I would not leverage a new offer for more pay at my current job. It will trigger red flags that you’re unhappy, and some managers are assholes about it. I honestly wouldn’t care, and if you were that good I would find a way to keep you. Good luck!
With how companies are rescinding offers I wouldn’t say anything to your current manager until you’ve done interviews and an actual contract of some sort is offered. That way if you do decide it’s worth moving on and you sign you’re covered. Gotta be selfish with companies these days.
Yes, that would be better. Give your current company a chance to meet your salary expectation. You can even negotiate after that. If it's unsuccessful, then you can start looking elsewhere.
You def can. But if they won't you have to be ready to move on.
