I would push back hard. Expecting an experience, qualified, desirable candidate to start in less than 2 weeks, particularly after the candidate asked for a much later date in the future, is a bad look and may highlight deeper issues within the company.
See if you can get them to agree to early Jan, but realize that IS really far into the future. That's about 6 weeks and most people aren't taking more than 1-2 weeks off during that time, so you're asking to push back 4-5 weeks of work.
Make sure you understand why they are asking you to start earlier. Do they have an urgent project? Ate they trying to get you on the books for 2020? Knowing WHY will help you better negotiate.
If you do move your start date up, consider going back to negotiate on other things (like last 2 weeks off, without it coming out of your PTO, or higher pay for being accommodating, etc).
Lastly, really consider what kind of company this might be if they're asking you to start in less than 2 weeks, knowing that you haven't even given your notice yet. It could be a negotiating tactic to get you to move your date up. It could be a rouge recruiter going off script. But if I were you, I'd be very weary. My last company did this, and it was definitely a reflection of their culture. Rushed me in the door, then had nothing prepared for my onboarding. When I went to quit, they wanted me to cancel vacations stay longer than 2 weeks. But yet they were happy to ask me to give less than 2 weeks to my previous employer...
All of this. I've had to hire people in at a prior company by the end of the year or the roll when away. Knowing the Why is helpful in making a decision if you want to move forward.n

Push back. Let them know you have plans for the upcoming holidays and can't start until the 1st. See how flexible they are.
Well, you still have to go through onboarding. It’s ideal for them if you could do those for a week and hit the ground running on Jan 1st. Also, you are leaving for a reason. No one cares whether you gave 2 weeks notice or 2 months notice as long as you train your replacement. Ask them to start 2 weeks from today so you can give 2 weeks notice.
This happened to me. I did a short notice and took the start date (they did have a good reason- we’re having a Leadership Team meeting in Boston and wanted me to meet the team). But... I wish I would have not started so early and given a 2-3 week notice with a week off between.
But, Jan 1 is a really long way off, probably too long to wait for a start date. So I would try to get it to 3 weeks from today, 2 weeks notice + a week off for you to rest up and get ready.
The biggest challenge was that an official 3 weeks put me at Dec 15, and the next week is Christmas. Honestly With the way the holiday fell, it was my suggestion, but also understandable
