I️ value the minimal time we have on weekends greater than the savings of buying these items
Say that it's because you want spend time with her and not spend your weekend assembling the item.

Tell her exactly what you said to us. That time is the only non-renewable resource you have and you would rather spend it with her on fun things. Money you can always make more of.

Lol, opposite problem I assemble everything and have piles of wood to make stuff. Needless to say the backlog is insane and she's annoyed that I won't go shopping with her to buy the stuff. I like to hang in my garage to do this.
Depends on dynamics. If OP is a woman, then guy may be upset since he wants to save money and would help assemble. If OP is a guy then wife may be upset that her man doesn't know how to assemble furniture.
Its not that she cares how much you’re saving by making something. Some girls just like the thought and effort of making something. My gf is the same way. It’s tough to come up with something but when you do, it’s so much more rewarding.
Disassemble what she ordered once it's delivered. And reassemble. Both of you will be happy! Problem solved...
Unless making furniture together was supposed to be the "fun" thing to do together... in which case you might have to say "I'm not very handy... but I hope you find me handsome!"
Open a bottle of wine, sit in the middle of the living room and do it together.
We are very privileged to have these jobs. It’s easy to default to always spending the extra cash. If the effort to DIY is minimal vs. the financial cost, maybe she feels you’re acting like a stereotypical rich guy by not just doing the thing yourself.
