If the work is good they earned the right to be confident. If they are being arrogant and it's leading to mistakes then call them out, otherwise their confidence should help them keep being a high performer so you should encourage it
Sounds like you're looking for someone you can control who will honestly be less of an asset in the long term. I was that Junior you're referring to who was not cocky but simply self-assured and not reliant on superiors for validation so long as my work product was good. I had people doubt me and try to put me down because I was not reliant on them. Don't do that here, because you'll be squashing someone who could be a star

This question makes no sense. Are you threatened by their confidence? If you deem him arrogant, then provide appropriate feedback to him to aid his development.
Why would you replace someone capable who does the job perfectly? Managing people well (including their attitude and the perception they may give) is a skill. Perhaps you need to develop yours.
I don’t think arrogance should come with good quality work. Humbleness is a skill set. It allows you become a better team player as others feel comfortable reaching out to you for help. I would hesitate to hire someone cocky. A persons capability can be enhanced but cockiness can’t be tamed.

So it is said - people get hired for skillset and fired for behavior. If there is a eq/perception based grooming you can provide to someone on your team - it reflects on your leadership as well rather than trying to get him out
