Aside from parents always wanting the best for their kids (high paying jobs being a way of perceived success) I always felt that many first gen asian american kids were unconsciously steered towards quant fields because of language/cultural barriers if their parents weren't fluent in English. Like my parents could help me in math because the subject is basically universal but couldn't help at all with grammar or history. Then when deciding what to study you usually go for what you're best at/ what's easiest for you.
Aside from A1’s preach to the choir up there ☝️, I personally chose to be a software engineer because I absolutely despise public speaking and do not like interacting with people. Software is a job to just work in your own bubble and is a decently easy job.

High paying and also Asians are good at math (I know it’s a stereotype but on average Asians are better at math...)

I like money. Every job if been steered to involved making $$ so I can have a happier more stable and less back breaking work than my parents. I’m happy they pushed me and I will make sure my kids are pushed to succeed.
