What would you choose new job with 100% hike but no job security or existing job with less pay but with job security?

Happy to share I got an offer at a late stage crypto startup that's going public in a year or so. Nothing spectacular compared with some other people who post but wanted to share as a reference point. 5yr experience in RC living in what people could consider a tier 3 / 4 city.

Base - 100k
RSU - 120k/4yr
Bonus - 12.5% target
Sign on - 5k

For context, did over 100 cold job apps and maybe 15-20 hr screening calls over 3 months.

If you had a choice between Jones Day and Schulte, which would/should you choose and why? It’s hard to look pass the ranking/prestige of Jones Day but they are black box whereas Schulte is lockstep and a funds specialist firm which could lead to GC roles at a fund quite easily in the long term. That’s not the long term play here, but just stating a fact to consider. Also keep in mind I would be lateraling in from out of state.

I made a mistake starting SIP in a ULIP. Used to invest 7500 per month starting from November 2018. I have discontinued my premium payments since last year. That is when my fund was moved to an interim surrender state and now it earns 4% per annum interest.
