Can you keep working part-time at this company while finishing your degree? If you're serious about working in AI - as in building model rather than just UX testing - you will definitely need an undergraduate degree and ideally a master's and/or doctorate as well. You'd also be able to make much more than $75k that way. If you can pick-up relevant part-time work or internships along the way, that will give you valuable experience and make you more attractive as a candidate for full-time roles after graduation.
