Spanakopita Strifti: Greek Four Cheese by
Spanakopita Strifti literally means twisted spinach & cheese pie. A creamy cheese filling is rolled in phyllo dough then formed into a spiral. It’s the type of pie that brings Greeks warm and fuzzy feelings because it reminds them of their Yia-Yia (Greek grandmother). My Greek friend’s Yia-Yia would make Spanakopita Strifti every Thanksgiving and Christmas.
My version has four types of cheeses: cream cheese. ricotta, mozzarella and parmesan. Why no feta, you ask? Because I’m not on team feta. This may be sacrilegious to many Greeks but I just don’t like the salty sour cheese. (I sincerely apologize my Greek friends.).
The creamy filling was seasoned with dill, a little nutmeg, scallions, and spinach. It was then brushed with butter and baked to golden brown perfection. Garnished with sesame and nigella seeds.
You have to bite through several delicate and crispy layers of phyllo to reach the creamy center. What a heavenly journey that is!
