Stay downtown hilton or the excelsior. Eat cevapcicis. Roam around the old town. Work from one of the coffee shops. Walk the walls. Go to mostar for a day trip. Day trip out to kotor. This is dubrovnik at its quietest in the last many years. Enjoy it.
Agree with all of the above. If you’re going to be in the area for a while, take a bunch of day trips if possible. Go for Split, Zadar, Hvar, Plitvice Lakes (all Croatia) and Mostar in Bosnia. Don’t bother trying to get to Zagreb, it’s too far and struck me as rather boring.
Oohh and plitvice in fallllll omgg. Definitely drive out. I also adore split.
Second the drive to Mostar option. Dubrovnik was so touristy when we were there in 2015 that getting out in Bosnia was so refreshing. Bosnia is also super beautiful to drive through but definitely get the GPS. Zadar was also great. They have a great center market and delicious boureks in all the bakeries. That was our favorite place in Croatia.
You can see plenty of Croatia in two weeks. Definitely spend a couple of nights on Hvar - it’s still a good buzz right now. Plitvice Lakes is stunning and well worth the drive.
Third for the roadtrip to Mostar and Kotor. DON'T stay at the Hilton; you're not in a place with as much character as Dubrovnik just to stay at the Hilton. Stay somewhere within the old city walls instead. Half day trip to Locrum (literally right there). Visit the War Photo Museum. Eat at Nautika (one of the highlight meals of my life)
Rent a boat and island hop for the day. Surprised no ones mentioned this yet

Hvar is incredible. Vis is worth a day or two as well. Lokrum is my favorite part of Dubrovnik. Bistro Revellin is a great dinner spot in Dubrovnik, Peppers and Taj Mahal are nice as well.
