Szechuan Tahini Cold Noodles
Today is almost 100F. There was no way I would be slaving over a hot stove. Cold noodles was the best alternative for dinner.
I made a creamy dressing with tahini, honey, lime, Momofuku chili crunch oil, rice vinegar, soy sauce, and ground Szechuan peppercorns.
The Taiwanese ramen noodles have a nice chewy bite and topped with fresh herbs like mint and cilantro, then topped with shredded cucumber, green onions, and sliced almonds.
This is a dish of contrasts. The crunchiness of the almonds and cool cucumbers against the chewy bite of the Taiwanese ramen. The creamy richness of the tahini dressing against the lightness of the fresh mint and cilantro. The Szechuan peppercorns give it an interesting spicy kick with their characteristic tingling numbing sensation.
Szechuan Tahini Cold Noodles is simple but also complex in flavor and texture. So refreshing in hot weather!
