During initial onboarding with the firm, does the first week or so count towards utilization or is there somewhat of a grace period?

I have an offer from both where EY is paying slightly better than GT.

However, not really sure what to choose.
I have heard that busy season at EY is crazy, though coming from D, this should not be a concern, however I am too scared to jump into a deeper well hence any advice/opinion will be really appreciated.

The last 3-4 days when I wear my watch the face gets cloudier throughout the day, which looks like condensation on the inside. I take it off at night and put it away and the next morning the cloudiness is gone then this repeats. I have never worn it in water so not sure what is going on.
