You got 700 without studying so if you study, you'll improve.
I think you are right about plateauing. You should drop the idea of b school, don't think you're cut out for it, also take some paranoia medication while you're at it

(Please be a joke please be a joke) I think at this point you should work on being self aware...no way you're going to pass a b school interview otherwise.
This is stupid why would you think you've plateaued if you've done zero studying? Your baseline score doesn't tell anything about how much you can improve. Your improvement curve tells you about future improvement, but you have no information on that because you haven't studied.
Check out your score report to see which areas you did worst in. Fix those errors first, then focus on the rest of the sections where you missed questions. 700 is 90th percentile, and "good enough" for a lot of schools, but it won't differentiate you much.
Practice practice practice. You never know what you'll see in the real deal.

Im nervous because a lot of people that I talk to keep telling me that they didn't really improve significantly (50+ points) after studying, or that they oscillated around their first practice scores for a while. Want to know how people got past plateaus, if they experienced them, so that I'm a little more informed about study habits early on.

That was my experience on the SAT, I didn't have the most stellar score and nothing I did worked as well as I would have liked.
All my practice tests (Manhattan) landed around 600-620, but all the time spent studying (1-2hrs day/ 2 months) brought my real GMAT score from 680 to 730.
700 will get you a tier 2 school - maybe. Keep studying, it will be worth it, but great start.
