I wouldn't pay that much to someone I met over IG. Or that much for virtual anything...
But if you are going to do it, why not do a 30 day trial period to see if the set up works?
I wouldn’t trust a trainer off IG either which idk why it just gives me bad vibes. But if that is the direction you want to go you could look into a trainer at a gym? I know then you have to pay for gym membership but if you are willing to spend the money

$1800 up front ? a reputable trainer shouldn’t lock you in for that long. Personalized is always better but agreed - I wouldn’t trust a random trainer from instagram.
I would also separate the two - nutrition and training are intertwined but a lot of trainers give nutrition advice that they aren’t qualified to give.

Def don't do it. Try apps like Centr, Freeletics etc that are max a few quid a month for decent training programmes and progress tracking, often with some access free. And for nutrition there are loads of free online resources from general info to specific meal plans.
As someone who's been in the gym for years and is trainer qualified, I recommend only ever paying for a proven trainer and face to face sessions (proven trainer meaning track record of client results that match your objectives, not the trainer having a six-pack or photos of clients with six-packs).
Upshot is, these days never pay good money for information - it's all available free. And only pay small amounts of money for tools (like those apps mentioned above) if they'll help with motivation, progress tracking, training with friends, etc.
