CAVOK in Oliver Wyman does a lot of work in aviation and they seem to be at the top of the consulting in this space. Largely US based I think.

Accenture Seabury is good (that was a smart acquisition!) . Like PPs noted Oliver Wyman is good. You can also go niche like Leigh Fisher or InterVISTAS. Or go SI like Leidos or SITA. Or even an A&E firm like AECOM, Jacobs, Arup, Mott Macdonald, etc.
Airports and airlines are different beasts. Lots of in common stuff but also a lot of differences so definitely consider getting generalist experience or committing to a specific area. One of the coolest industries out there!
