White mountains, Portland (ME), Cape Cod, Newport (RI).
If hiking is your priority, I’d recommend finding a BnB in white mountains and doing a couple of hikes over the weekend.
Bumping the RI suggestion. In increasing order of beauty - Newport / Narragansett / Block Island. You could easily spend a day in each of them
A little bit of a ride, ~6ish hours from the Boston, but Bar Harbor/Acadia, Maine is incredible. Great little downtown with excellent food and the arguablely the best hike, Mt. Caddilac, on the east coast.
Portland ME is lovely but busier than what you may be looking for.
Portsmouth NH, Quechee VT, or Bar Harbor/Acadia ME might fit the bill! Theres a lot of hiking across these three (with Acadia being the toughest). Bar Harbor has great food and the biggest restaurant scene of these three, but Quechee will probably be the quietest and most affordable of the three.

The Berkshires would also fit the bill here. Lenox and surrounding area is higher end, but very pretty with some nice trails nearby.
2nd this. Was in Great Barrington area for a wedding with nice hiking and decent downtown dining. Super chill
Equinox in VT has some nice hiking on hotel grounds

Modern designed “glamping” cabins with showers. Lots of hiking options around
Bar Harbor/Mount Desert Island area never disappoints. Even when the weather isn’t great, it’s an awesome get-away. I got married up there and we try to get back there at least once a year. Heading up in a couple of weeks! So many lodging options, depending on what you want to spend. And don’t forget Southwest Harbor which is the “quiet side” of the island. Hearth & Harbor has some of the best pizza I’ve ever had and a great vibe. Outdoor seating too. For romantic dinners, top picks would be Red Sky in Southwest Harbor or Salt & Steel or Havana in Bar Harbor then walk around the downtown area, grab some drinks around the fire pits and enjoy live acoustic music in front of Ivy Manor Inn. Save some room for ice cream at Mount Desert Ice Cream.
Hike out to Bar Island for an easy hike with spectacular views of Bar Harbor. Rent bikes and ride the carriage trails, take a lobster boat tour, sea kayaking where the seals swim right up next to your boat, grab a table outside of Balance Rock Inn and catch the sunset, (they have a very unique drink menu)!
Breakfast at Side Street Cafe is a must-do!
Catch the first sight of sunrise in the Continental United States atop Cadillac Mtn.
Grab lobster rolls or panini’s from DownEast Deli and a blanket and head to Agamont Park for a picnic and watch the tall ship and sometimes cruise ships come into the harbor. Follow the path along the water, starting in front of the Bar Harbor Inn for a short scenic walk.
SO MANY options. Can you tell who it’s one of my favorite places in the world?!
