Are you in CA? If in CA, look at the McPhearson case on unlimited vacation. It’s supposed to be unlimited without some express or implied limitation on how long you can be out for in general. So if in practice people are only taking 2 weeks because they feel pressured to not take more, then even if it’s called an unlimited vacation policy it could be deemed an accrual policy, warranting paying you out whatever that express or implied limit was when your employment ends. This isn’t legal advice. Just something you could look into if you’re in CA and can flag for your firm now if they push back against 3 weeks or if you’re more squeamish then take what they give you now but make a record of it and when you leave demand they pay you out your accrued vacation.
Yes 3 weeks is very standard

3 weeks sounds like a long vacation to me. I would not be comfortable stepping out for that long.
Just a question. If you don't have responsibilities then 3 weeks is fine. But for me I own things and am responsible for them getting done. I just wouldn't feel like I could leave it for the entire 3 weeks.
