At the beginning of the year, we were supposed to do this so we could provide them to absent students in our LMS, but ended up just doing short recaps.
My guess is accountability. It may not be that your admins have a trust issue with you, this may be a broader community trust issue, or a board member or members. Especially since they are recording other meetings. Personally, if I were a parent, I would not allow a recording of an IEP meeting. Most districts I know won't allow a parent to record without at least permission from the board attorney.

From what I understand...IEP meetings CAN NOT be recorded.

Yeah I really think that's weird. I HAVE been in IEP meetings that had gotten so contentious that a school attorney and parent's attorney have both made audio recordings, probably under court order. But every meeting? No.
We have been now told by administration to watch what we post on social media.

Oh wow. Yeah. That's getting shady. Someone, somewhere created trouble for someone in your central office, and everyone is one edge about it.
Obviously, the solution is not to address with the people who may have created the issue, rather it's a good idea to just make blanket proclamations.

Recording and posting IEP meetings is not HIPAA compliant.
