„Realistically learn“ without a system to play in - none. SAP experts make their money because of their experience. You can’t get that without hands on the system, and also not in 2 months.
My best advice is to get an overview of all the different Moduls, solutions, options you have with SAP, maybe an overview of industry solutions and certified third party solutions that connect to SAP. If you know what’s out there and what it generally can do, you’re in a good spot. Try to find typical scenarios for typical industries.
Are you on Open SAP? They aren’t hands on skills but a great way to stay up to date. Even just watching the courses on migrating to S4 or updates to s4 are instructive in understanding SAP’s messaging around it
S/4HANA, SCP, SAC. Trials should be available for those.

Deloitte should have some training resources for SAP I would think. Other than that find terp10 training resources for general process overviews and how each module is connected to others. Also learn terminology cause that’s the big driver for SAP other than navigation which to me is the most important skill you could learn. Only other advice I can say is something my old config professor told me, “sap is a stool. One leg is configuration one is master data and one is org data. That’s what ya need to do transactions. Almost Every diagnosis for an issue or a solution to a problem can be found in those three aspects” and so far that has been the best advice cause it’s true at least in the base support roles and then even in my recent deployment project roles.
