Think about what you're doing on a daily basis. Are you in a particular functional area? Who from a client perspective do you pair up with? What do they do? I think you'll find many opportunities in business process type of roles. Think of yourself as an end user of the solution - what jobs do those people have?

Exit option for SAP is not that great, especially if you have been on functional and technical side. Consulting SAP PMO roles have better exit options in my opinion.
I don't understand your logic here. Generally, most folks that have been working in a functional SAP role for several years are not just capable of configuring SAP. They've been a part of many process discussions in the respective workstream focus. So, you should be easily able to transition to a business process type of role. People will like that you've lived on the solution side of the table and can apply that to solving general business process challenges. If you spend 3+ years in an SAP role and all you can do is flip some switches, then you're doing it wrong.
