You get a lot more control over the direction, it can be a more exciting time for the project, you can often get in on more equity. You just have to choose wisely.
Big tech - scale of impact and more sure compensation. Different day to day though.
Boils down to high variance vs low variance in experience and growth.
In big tech, you’ll get more structure, mentorship, higher guaranteed pay, but also less opportunity to grow quickly or get seriously rich. In startups, it’s the opposite.

Make sure you pick the right startup. it needs to be well funded and well managed (or fully self sustaining) and you want to come in when the product has already achieved product-market fit. I know that it's very tempting to want to be the one to make the product work, but until then you won't get a good idea of how great the founders are or if they've got the right head on their shoulders, or if this is a product that will stick, no matter your instincts. I think startup is more fun, but it's also much higher risk!
