If you're asking for ways to save money, sure, they're definitely out there (classpass, activity-specific clubs, etc.) but it's worth setting a budget first and going from there. A fun exercise is placing a dollar value to your activities throughout the day. Then, determine your level of happiness achieved and health benefits (short/long) associated. It can help you get a sense of how much a $30 is worth it when you're going to spend $12 on a matcha latte, anyway. For reference, Equinox ($300), acupuncture ($200-ish/mo), PT ($150) and therapy ($150) every month.

Have you looked into ClassPass? It’ll involve calculating $/credit for your projected use and seeing how many credits certain classes are. I think there’s a lot of Pilates on ClassPass, and in my experience I’ve saved money using it. If you want to give me a couple studios I’d happy to search studio credits in my app for you. The above will likely only help you for Pilates since those studios are plentiful. However skating in a rink requires a lot of space NYC doesn’t have, so unfortunately that’ll likely be pricey and far. I feel your pain, I came from a swimming background, although an ice rink is probably even more difficult to find/pay for than a pool.

I want to start BJJ so damn badly especially with all of the subway horrors in nyc, and being a female - but it’s ~$350 a month. Considering taking up a small side gig so that I can do this without any guilt.

If a hobby makes me happy and brings me joy and meaning to life, I budget other things to ensure I can keep indulging in my passions to the fullest.

I go to equinox (215ish a month with corporate discount) and it’s 100% worth it to me. I enjoy working out, I like doing it every day, the classes are spectacular, and they give me something to look forward to
Almost every gym has a free class offer. I would maximize trial classes and just try every gym there is.
