Rump roast! Can also do this with Eye of Round (which I prefer, but this is what I had and you can use this method with any otherwise tough roast cut) - turns a bargain basement cut of meat into something you’d be proud to serve at a dinner party.

For anyone interested in the method:
Tie up nice and tight with butcher twine, herb crust with plenty of kosher salt, then roast at a very low temp (275 or 300, 250 if your oven goes that low and you have time) on a rack until internal temp is about 125. Don’t rush it with a higher temp on these cheaper cuts or they will be disappointingly tough. Pull from oven and let rest 20-30 mins under foil. I use an oven probe/ovenproof thermometer to make it foolproof. Crank up oven to 500 (or broiler) and pop it back for 5-6 mins until you see a nice toasty crust. Be sure to slice very thin, and serve with sauce of your choosing - I made fresh horseradish cream sauce for this, but jus or gravy is also lovely.

This also makes a killer boneless lamb leg roast.

Does anyone else dread flying back home to spend a weekend in the town you grew up in? The older I get the harder it is for me to go home and visit for the weekend. How do you deal with the anxiety of going home? I love my family and am fairly close to them. I have another sibling that lives out west.
