1) they are too lazy to support you with new hires. Do you think they can afford to lose you at this time?
2) onboarding someone will be next to impossible when majority of the staff is WFH.
3) just do the bare minimum, but don't get fired. Getting let go means getting severance which would give you some breathing room.
4) use that time "slacking off" to get your shit together and jump ship when the time comes.
Sometime you got to call people on their bluff. Some supervisors success because they are great at manipulating people to do more with less. That's causes burn out and you'll quit. Opening it up for a new person to manipulate.
I'm betting that supervisor has never fired anyone before and made people's lives miserable and forcing resignations. If more people turn on this person for being a tyrant then it'll expose their BS.
Hang in there. Don't let that person stress you out. Think of the movie office space. The more you don't give a shit the better you'll feel... Who knows you might even get promoted.
As much as possible, get them to prioritize work. That way when they unreasonably ask why 6 things aren't done, you can reasonably say because we needed these other 3 things done first, no support was available since resources are tied up with similar priorities, and you haven't invented a way to freeze time
Hard to say without knowing the situation. Communicated properly, I hope it would help. You may not be the only one feeling overwhelmed by unreasonable demands. The key is how unreasonable those demands are -- reality is reality, and what's reasonably possible is not a subjective thing.
BUT...No matter what you are feeling, try to project positivity and that you want to help the team succeed. It is not fair to ask, but try to never let them see you rattled. It unsettles leadership and they may further take it out on you, even if unconsciously.
