Avocado toast, breakfast burritos, Morningstar farm sausage on an English muffin, yogurt/berries/granola. Sometimes I do tempeh or tofu scramble—you can make it in advance. I also love a bagel with cream cheese/capers/dill. If I’m feeling healthy I scramble oats with egg whites and stevia. You can make egg white “muffins” in a muffin tin with salsa, veggies (broccoli/spinach/fajita veggies). Sometimes I cut up sweet potatoes and put them in the air fryer to have as aside with eggs/tofu/tempeh scramble.

Try looking up recipes for tofu scrambles! Tastes amazing and is my go-to (I second what's been said above - tofu is amazing and taste totally depends on how you season it).

Coconut yogurt with any kind of granola / nut butter and fruit, oatmeal or overnight oats with fruit, the ezikiel raisin muffins with peanut butter (and raspberries or banana on top), daily harvest smoothies, avo toast with everything bagel seasoning and hard boiled egg on top. I’ve been vegan for a while and these are my favorite breakfasts. I add vanilla pea protein to my oats too.
echoing those above that tofu is easy protein with the right methods, but sounds like you should give Just Egg a shot! it comes in a bottle and you can cook it like scrambled eggs or an omelette, but they also recently came out with a “folded” version that you pop in the toaster along with your bread, and i prefer that because it’s less prep and there’s no way to mess it up. it adds more substance for a hearty breakfast and helped me transition away from eggs.
Fruit is great for breakfast.

Love Birch Bender’s Keto pancake mix. Not the Paleo one, that one has a weird after taste. I eat it with berries and it’s delicious.
Can confirm the paleo one tastes terrible.
