In theory, it is to help the company understand why people are leaving and look for ways to reduce turn over. I suspect that most information from exit interviews is ignored or dismissed as being from 'disgruntled' employees. I guess, if the information is significant and consistent, it could have an impact. E.g. if several people under the same manager leave and cite the manager as the reason... perhaps that manager might face consequences. You are under no obligation to say anything you don't care to say. If you just want to say, "I found a better job" then just say that.
