What sort of incentives do you offer users for short user testing sessions?

We typically offer a small incentive, such as a $10 Amazon Gift Card

In remote, giftcards are usually the most convenient to give to users. The few times we have done face-to-face testing, we offer them gift cards and lunch.

It depends on what the testing is about and how long it is. If they are very short, a $5 Amazon giftcard usually makes the users happy, but if the testing is several days, it is better to give them either a larger amount or they can choose the incentive themselves (a product, discounts, etc).

We offered T-shirts at one company. Fairly cheap AND free advertising. At another company we did $15 Amazon giftcards.
