What type of engineering is the best option for having a decent work/life balance?

It really depends on your interests, because "engineering" is a very broad category... but I would have to say that if you aren't prepared to commit a LOT of time and a small(ish) fortune to getting an engineering degree, then I'd steer clear of chemical engineering. It's a very intense field to get into.

Civil engineering is a good fit for most people, as long as you're analytically inclined. One caveat is that it might require a fair amount of travel depending on where you end up working. Hard to earthquake-proof a bridge or mitigate damage to buildings without seeing it in person.

Look into HVAC, companies are always hiring for these positions and you make pretty decent wages. It does require some training but a lot of it can be picked up on the job if you find someone willing to take the time to teach you. And considering how many positions are open, I'm sure you wouldn't have to look too long to find a company that would be happy to take you on

That's a really tough question. There is a lot of variety in roles within any one field of engineering. Perhaps a better question would be what kind of roles exist within a particular field of engineering and the workload for each

Really anything falling under the umbrella of "interdisciplinary engineering" is the most flexible for finding a career. And a lot of life/work balance is about working for the right company. I've had "good jobs" before that I've hated, the company culture is the biggest component in your day-to-day interactions with coworkers and your workload.
