Start out with spirit forward whiskey cocktails, like a Manhattan or Old Fashioned, where she can start to appreciate how whiskey tastes but also adding sweetness to tone it down a bit. Then try to find a whiskey that is very approachable. I don’t agree that you should start with peaty scotches, since the peat flavor and smell is definitely an acquired appreciation. I generally start new whiskey drinkers on something low proof. IMO, Japanese whisky is the perfect starting point because the whole purpose of what they make is to have it be very drinkable. Hibiki Harmony is a great example of this…low proof blend, meant to be approachable for most. Then I’d recommend finding a low proof, sherried scotch since it will have some of the sweetness of a whiskey cocktail. I almost always start people off with some Glendronach Revival when introducing them to scotch.

Go to a distillery, take a tour, and do a tasting. Having someone other than you tell you the proper way to smell, taste, experience it worked for my wife.
I’ve found that most people new to whiskey do better with slightly peaty ones which seem to take a little of the alcohol burn off of it and also prefer lighter (80 proof) and smoother like a Speyside or Highland scotch. Enjoying complex whiskies comes a lot later, after the “smooth” and “one dimensional but tasty” phases. If she doesn’t like the smoky taste, I’d start with scotches in the 12yr/$40 range like Glenfiddich, Old Pulteney, Aberlour, Glenmorangie, etc. I’ve tried to share nicer bottles with friends and they just can’t appreciate/tell the difference until later 😔

It’s at a higher price-point, but I’d go with Glenmorangie Signet ($190). It’s because Glenmorangie uses a fair amount chocolate malt in the distillation process for this scotch so it’s somewhat like a dessert provided she likes chocolate.
Maker's Mark Manhattans were my entry point. Maker's Mark 46 if you want to smooth it even more.
This. Use a sweet wheater (like Maker’s, 1792 sweet wheat, or Woodford Wheat, get some proper Demerara sugar cubes, a flavored bitter (orange is great), Carpano Antiqua vermouth, and of course Luxardo cherries.
Watch a tutorial or two. Mix up a luxury level Manhattan with those goods and she’ll be hooked.
Backup plan, you’ve got the goods, and get her some Prosecco and Chambord…share the jar of cherries.
