Nothing more impressive and fun than having a homemade pizza night. Make your own dough night before and refrigerate- so many recipes online. I have used Sally’s baking addiction recipe with success (but I used bread flour in mine for chewier crust) If lazy buy dough from a local pizza parlor. Prep the pizza sauce and toppings and bake fresh for your date.
Another recent success I’ve had: Korean style chicken wings (recipe from the kitchen whisperer is good) with kimchi fried rice.
If all else fails and things feel overwhelming: nothing wrong with a simple taco bar for two with fresh Guac and chips
Beouf bourgoignoin but make it in the instant pot so it only takes an hour! It’s very impressive and fancy and smells really good but not actually that hard so you can pay attention to your date.
Roasted chicken. Julia Child's recipe. It's really simple, but smells so good and is delicious. I put golden potatoes in the roasting pan to cook in the juices and butter.
Or lasagna, which can be prepped ahead of time and just put in the oven just prior/when they arrive.
100% agree on a roast chicken. For sides, Roast quartered red potatoes with a mix of olive oil, a seeded mustard and fresh rosemary. Put them in a half hour after you put in the chicken. Throw a premixed mesclun type salad together with a couple of fun ingredients - strawberries, toasted nuts if some sort, goat cheese. Worked for me, and 10 years later it’s some variation of a weekly family dinner!
Simple yet impressive app:
Puff pastry: roll it out until it’s like 12x9
Brush the inside (leave a crust) with Dijon mustard
Sprinkle that same area with gruyere cheese (fontina is nice too)
Place asparagus across the whole thing (each one/every other way makes a nice pattern)
Cover with more cheese, salt and pepper
Bake for 20-25 min @400

Ramen is good and easy and relatively impressive as long as ya don’t mind slurping in front of people.
Pan seared salmon with steamed broccoli.... keep the fan on, otherwise it might smell like fish upon entry. Keep the portions small, to allow for dessert
If you can get fresh pasta, it’ll make any pasta dish taste 10x better. Shrimp scampi (made with a packet of knorrs vegetable soup mix) is my favorite fake fancy dinner.
