Microwaving cooked chicken on the stove or baked makes it have a rubbery texture to me. I solved this by marinating the chicken and then grilling.
Could you not microwave it? An alternative is to make chicken with some sort of sauce to keep it from drying out.

I tend to put leftover chicken in something super flavorful. Like a spicy soup. Or stir fry with a sauce
Add more flavor. Sauces, cheese, etc
Cook the chicken in the crock pot. Best recipes I've tried are with salsa or with greek yogurt and spices. You can freeze it in lunch sized portions and take one out the morning you plan to eat it.
Marinade the night before
I know exactly what you mean. I only eat chicken the day I cook it. The next day it has a weird taste/smell that I can't explain.
Warming it on stovetop helps a little.

Do grilled chicken you can eat cold. I used to get some grilled chicken from the grocery store and chop up to mix with a cold pasta salad type thing
Don't cook it all at once. Marinade a few pounds worth, enough to last 2-3 days, and cook/grill it the day you eat it. Putting leftover chicken in the microwave is like eating cardboard
I have the same issue. I started grinding chicken thighs in the food processor and it’s been a game changer. Use different sauces and marinades to make it interesting. This week I have Mongolian garlic and carnitas sauces (found at Target). I’ve also done Greek spices and that was amazing.
I slow cook it in the crockpot with buffalo sauce and honey. Doesn’t have the weird taste the next day when it’s reheated.
Maybe it’s because left over chicken can tend to be dry depending on how you cook it.
If you just don’t like that taste, then cut it up and throw in crock pot and do a chicken stew, chicken and noodles or even a curried chicken.
Any of those, cooked on low for a long time should make it tender and not dry.
