First, when you do that, the day you get back everyone bombards you, and you have no time to get your bearings. You know that day after vacation mad dash where you’re trying to get caught up on old emails and settle in and everyone and their mom is calling you with new emergencies and how awful that is?
Second, what if something happens, and my flight is delayed or there’s some emergency? People are twice as pissed if you say you’ll be back Monday and end up coming back Tuesday or Wednesday than if you don’t say when you’re coming back at all. It’s in line with under promise but overdeliver.
Third, it’s none of my coworkers’ business other than the ones I’m already working with. I’ll tell everyone else when I get back. The ones I work directly with on files already know when I’m leaving and when I get back.

I never say my return date lol, but neither do most people at my firm.

I tell people who I work with when it will be out of courtesy. I don't owe that to anyone (other than HR, maybe), and neither do you.
