When I first got my job 3 years ago I settled with the title I have now (Marketing Coordinator) even though it’s not really fitting. I’m the sole marketer for 3 companies. I have 7 years of experience and answer only to the C-suite. I’m honestly juggling more work than 1 person should be doing and that makes my title/salary ($54K/yr) seem insufficient. What I’m wondering is, am I being unreasonable wanting a better title/salary and does my title really matter when asking for a higher salary?

Try looking at job descriptions, like Marketing Manager/Director. Does the role and responsibilities described match what you are doing right now? If so, what is the expected salary for these positions? Try to get examples from within your own industry.
I would then use that as basis for discussion with your boss. Be clear you enjoy your job and want to stay, but would like to have compensation and job title in line with your actual responsibilities. Be prepared this negotiation may take time (months).
Hopefully your boss is smart and agrees to give you what you ask. Otherwise, time to update that resume and start networking..

Definitely NOT being unreasonable here! $54k is a -fine- salary, but not for doing the work of what should be multiple roles. It may be that you have to look elsewhere, but have a frank conversation with your current employer about the need to a) reassess your title and salary and b) hire additional help.

Wondering if I should also include how we have been having a hard time filling positions so the market is in employee favor for my role as well as inflation? Should I go into granular detail on the math done to get to my #such as market average for my role the % increase I had for my last promotion etc

When pushing for a tier promotion (level 2 to level 3), is there a best way to also say what I want to be paid? Or do I just accept the pay increase that the promotion brings and wait until an annual review to negotiate a new salary? The requirements for the level 3 include 4 YoE, with 6 YoE preferred. I’ll have 5 when I push for the promotion, so I’d want more than the base level of pay in the range.
