When you change firm on h1b, if your new visa goes through earlier than expected, can you still work on the old job for 2-3 weeks (due to transition etc) and then jump?

I was offered X$ as a salary for a supervisor role. I asked for 10k more as a counter and received a greater breakdown of the correct pay being offered. With bonuses and shift diff it comes to maybe 5k more. That is only if the bonuses and overtime bonuses kick in. Do I still go with my original counter? This is very confusing for me.
