Since we aren’t sure about global travel, personally I would opt for the pacific north west. I did 6 weeks this winter/spring and LOVED it. I got to hike, snowshoe, run, ski, explore. It was great and I am debating a second trip for the summer because the weather will be even better. I think it really depends on your definition of fun as I love an overly active lifestyle, but I also know people who have gone out west and hated it because they don’t like hiking and such
I’d stay in US personally. International with COVID is a big question mark. Do the national parks via a road trip!
I’m already vaccinated and still only planning US trip for what it’s worth

I'd add to this to go up into British columbia and Alberta, beautiful areas up there to visit if you like the mountains and scenery at all
East Africa or Central America. Accounting for tests to cross borders isn’t ideal but doable

Florida Gold Coast. Empty during the summer. If that’s too hot fir you go further south pick a Caribbean island and relax.
