I don't recommend litter training a dog. Bring them to doggie daycare and/ or get a dog walker.
On separation anxiety, totally depends on the dog itself, less about the breed.

8 hours is not too long to leave a dog. Any dog can develop separation anxiety it’s not breed specific. Socialize the dog. And you may want to hire a dog walker to come midway through the day. I have 2 dogs so I never worry about this. Good luck.

Yeah, I mean— I wouldn’t adopt a puppy, tbh. And they wouldn’t be litter trained at all. You’d need to potty train them (which takes time) and make sure they are able to get out at least every couple hours.
An older dog might be more your speed. Especially seniors. All they want is love so…
