A lot of religiously observant Jewish associates refuse to work over Passover (or on the Sabbath), and firms accept it. I was always surprised that people of other religions don’t insist on taking their holidays as well. It’s hard to feel like you have any power as an associate, but the firm really can’t punish you for it, especially if you’re not planning to stick around to make a run for partner.

Agree with this. I have an arrangement with my firm (V5) not to work on Sundays and it’s been respected so far for 4 years. I find that people are accommodating (generally) if you’re clear and firm on the boundary.
It isn't the partners, it is the clients (and depending on the practice, it can be traced to the clients' customers).

I’m not doubting that some clients will move business if you ask for extra time or push back, but that’s pretty rare. I’ve seen too many partners keep quiet out of some misguided sense that it impresses the client to crank things out on crazy timelines. I’m in house now for about 6 months and I’ve had to have several conversations that it doesn’t impress me to get work product at 3 am or Sunday mornings (unless there’s a true emergency going on, which is very rare).

I am thinking about whether in-house lawyers also work as hard. They reply to emails immediately on Sunday afternoon, early morning at 7 o’clock, and late night at 11:00 pm.

Depends on the inhouse lawyers. Some of them do and some you could not reach after 5pm if their life depended on it.
To clarify, the call was scheduled for Friday, he just wanted to cancel it to free up that time to get other work done before Easter weekend! I have weekend calls when deals are crazy or there’s something time sensitive, but don’t normally expect them.

Its not clear from your post whether you told the partners it’s a holiday for you and you’re taking time off, and communication is key! If they know about it, they will likely respect it, but many people don’t celebrate these holidays and can’t be expected to know that you do. I actually had no idea that Easter was this weekend until a junior associate emailed me yesterday asking to push a call with me to Monday so he could get work done before Easter, I was absolutely fine with that and also offered to cover any work that comes up for him this weekend. Most people will respect your holidays assuming there’s not an emergency, we just need to know about them!!
I’m not sure if you’re title is correct A7, but I have found senior associates to be more humane than partners. I had just communicated that I was spending Easter with my family when this was scheduled. The client also requested a call early next week (not the weekend), which added to the frustration that the partner offered today. I tend to have calls scheduled often on the weekend ever since the pandemic started and erased all sense of boundaries, but I really wish that holidays were respected.
