Sounds like you need to work on your personal boundaries. Part of being successful in this career is ignoring stuff like this and managing that stress and not worrying about responding until you get back.
Something I need to work on. Covid has made it worse as some teams are on the east coast, some teams are on the west coast, and all expect you to make their client your priority 24/7 365.
You need to set your own boundaries. When I was not yet a partner, I made it clear that I would do one big family vacation a year and that was off limits. Other times, they could contact me if it was important and couldn't wait. That was always respected by my teams, and we covered for each other. I do the same now with my projects - I cover for SM or other partner when they are out, and they do the same for me. Arrange your coverage if you can before you are out, and do the same for your peers. There should not be an expectation for you to be available on a true vacation.

And the "oh, I hadn't seen you in a while" passive aggressive comment from manager/partner the day you get back.
^THIS. Like no sh*t you haven’t seen me. I’m on VACATION. If you work on PTO, that’s you’re problem. I’m sure as hell not.
I got married last week and my internal OOO message said “I am getting married and will not have access to email or Teams. Contact another member of the engagement team while I am gone. If it can’t wait until I return (for example, it is a life-threatening emergency and only I can save you), you can call my cell.”
Got the point across.
Along these lines my SO teacher always put a summer OOO that said "in case of an emergency please contact 9-1-1." It did not include his phone number.
Granted as a teacher he was not paid to work summers.
When on vacation, I only respond to clients. If they need immediate attention, I redirect to someone else. We work in teams for a reason. I’ll cover other so they can get their much deserved downtime.
I'm not even doing that. They can read my out of office message.
I try to not even cc people on emails if they are not needed and are on PTO.
I always do this, and then keep a running list of items to notify the person about upon their return. Instead of 30 emails they get one 10 minute call of FYIs.
Turn outlook and teams notifications off immediately after you put up your OOO message.
At least you get to take vacation, I’m still working as we speak at 0:32 on this Sunday morning and will be for the next couple months, coming from a public job busy season too.
Is it like you don’t want any emails? Or do you don’t want someone emailing you and expecting a response that week?
Can you leave your OOO to just say “I will return XX date”?
Sounds like a first world problem.
