I know I can…but he has 3 businesses and they all have super-scrapper vibe. Action photographer, web designer, brand promoter. I don’t NEED the work but it feels weird to decline since I already took on his wife. WWYD?

For OW we typically hire down a level to try to lower expectations and maximize probability of a successful transition - aside from potential skills difference (which we can debate and is candidate-specific), there is always the cultural barrier to overcome which can derail experienced hires.
Depends on the person, practice, and level
Yeah - I’ve heard horror stories of post mba people coming in at Consultant level (undergrad level). It doesn’t matter in the long run (or medium run) - you can jump levels pretty quickly to adjust to your actual competency
